This is a Pai Mu Tan (White Peony) white tea from Fuding, Fujian Province, the main production area of Chinese white tea.
The picking standard for Pai Mu Tan is usually one bud with one leaf or one bud with two leaves of spring tea. The leaves are tender and plump, the liquor is apricot-yellow and clear, with a fresh, mellow, and slightly sweet taste carrying honey notes.
Pai Mu Tan is processed without frying or rolling, involving only withering and drying. However, the technique is not easy to master. The baking temperature must be just right: too high and the aroma loses its freshness; too low and the flavor becomes flat.
It can be brewed using a cup, gaiwan, or teapot.
